I'm a bit confused i think this guy might fancy me but i'm not sure. Well he came in my shop with his mum twice and smiled at me and laughed when i said that that i'm terrible at packing shopping.

Laughs at your jokes, that's a good sign, in addition to the smiling at you as well.

Any way I went on my break and he went looking for me on his own but i was on my break so gave this note to my manager and told him to give it to me although we don't really know each other so i asked for cctv for proof

If a guy goes looking for you like this and has the boldness to leave you a note, I think that's pretty fairly conclusive evidence that he fancies you.

Yep, I think you can safely say he fancies you a lot. 

leave me a text sometime if not have a merry xmas. we're both rather shy and he seems genuine and we text each other everyday but it's stuff like hey how's your day? long shift?

That's how you start off a conversation with someone really isn't it.  You need to make small talk, you can't just walk up to someone and say "Will you go out with me?", without them even knowing who you are. 

but i'm not sure of his intentions does he want to get to know me more before he asks me out? or is it endless texts for friendship?

He wants a chance to ask you out, but hasn't had that chance yet.  It could be that he is trying to get to know you, it could be that he is trying to get you familiar with him, so that when he does ask you out, it increases the chances of you saying yes.  He could be just trying to find the right opportunity. 

all i know is that he said smiling is a great quality and that he likes me.

Smiling is a great quality for a woman, a guy doesn't want to be with a miserable woman.  A happy smiling woman, makes him happy.
